- One (18-pound) whole turkey, neck, and giblets removed
- 1 cup of dry white wine
- 2 cups of kosher salt
- Two sprigs of fresh thyme, divided
- 1/2 cup of butter, melted, divided
- Two large onions, chopped, divided
- Four pieces of carrots, coarsely chopped, divided
- Four stalks of celery, chopped, divided
- Bay leaf
Initial Preparation
Once your turkey has thawed, remove it from the packaging. Next, rub kosher salt over it, inside and out. Then put the turkey in a large stockpot and cover it with cold water. You’ll also want to put the turkey back in the fridge for about 12 hours or overnight. After this time, preheat the oven to 350 degrees. You should also thoroughly rinse the turkey.

Thirdly, brush the turkey with about half of the melted butter. Next, put the breast side of the turkey down on a roasting rack in a shallow roasting pan. Put half the onion, half the carrots, half the celery, one sprig of thyme, and a bay leaf in the cavity of the turkey. Take the rest of the vegetables and thyme and scatter them in the bottom of the pan. Then pour the white wine over the veggies.

Time to Roast
Lastly, you’re now ready to roast the turkey. You’ll want to roast it uncovered, making sure that there is no longer pink at the bone. Furthermore, the juices should run clear when the turkey is ready. It should take about 3 1/2 to four hours for the turkey to roast. About two-thirds of the way through the cooking time, you should turn the turkey over to the breast side. In addition, you should brush it with the remaining butter at this time. Once the turkey is ready, let it rest for about 30 minutes before serving it.
